“The Amazon” Smoothie

Rio de Janeiero, Brazil is a MUST visit city. Therefore, we had to make The Amazon Smoothie while we were here.

In this video we learn about the importance of micronutrients and macronutrients.
The Amazon Smoothie is extremely delicious with a plethora of nutrients. The electrolytes from the Coconuts will provide your body with the proper hydration that it needs. The persimmon is a sweet fruit that is filled with Vitamin C to keep our immune systems strong. Our green this week is Arugula which is filled with vitamins K, A, C and phytonutrients.

You never know what interesting ingredients that you will find when you are in another country. So be spontaneous and have fun making your Green Smoothie. Enjoy!!!

“The Amazon” Smoothie

2 – Fresh Coconut Water (equals 2 cups)
2 – Bananas (small)
3 – Persimmons
1 – Cup of Arugula

*Blend for 30 seconds to 1 minute
*Yields about 6 cups
*About 49 Calories per cup

Pour into a tall glass or a To-Go bottle and ENJOY!!!

The Green Regimen’s “Sweet Potato” recipes

6 unpeeled medium sweet potatoes (longer recipe but better tasting)
Preheat the oven to 400 degrees. Line a baking sheet with aluminum foil. Rinse the sweet potatoes under water to wash off dirt. (See Green Regimen’s Video on “How to wash your Fruits and Vegetables”) Place the sweet potatoes on the lined baking sheet and spread it out evenly. Place in oven on the middle rack for 90 minutes. Times may vary depending on the size of your potatoes. Let cool until warm to the touch. Peel the skin off the potatoes and place into a large mixing bowl. The skin should peel off easily if they are fully cooked. Use a potato masher to mash the sweet potatoes until the consistency is smooth without any lumps remaining. The sweet potatoes can keep in the freezer for up to 10 months when stored in a heavy duty freezer bag.
