Lunch: Green Smoothie
-2 Ripe Bananas
-1 tbsp Ginger (Fresh)
-1 Tsp Turmeric
-1/2 cups Parsley
-2 Cups Spinach
-1/2 Lime juiced
Dinner: Coconut Curry
-Green Snap Peas
-Low-fat Coconut Milk
1. Place all veggies in to a pan with some water. This process will allow your veggies to steam and become soft.
2. Add in your seasonings and stir well.
3. Add your 1 can of coconut milk in and combine all together.
4. I added 1tsp-1tbsp of maple syrup just to give it a little sweetness as well as some coconut flakes.
5. Add in your chickpeas and serve over brown rice or rice noodles.
6. I topped this with sprouts and avocado!
Dessert: Banana NiceCream
-2 Large Ripe Bananas
-1 Tbsp Peanut Butter
1. Combine all ingredients into a high speed blender.
2. Serve with any toppings or just have it by itself.
